Zucchini Fritters Recipe

Ingredients
  • 3/4 c ricotta cheese .
  • 3 eggs, slightly beaten .
  • 1/2 c sliced scallions .
  • lemon zest (to garnish) .
  • 2 tbsps sliced fresh flat-leaf parsley .
  • 1 c all-purpose flour .
  • 2 tbsps sliced fresh basil .
  • 3 c shredded zucchini .
  • 1/2 c shredded parmesan cheese .
  • 1/4 tsp pepper .
  • 4 tbsps olive oil, divided .
  • 1 tsp salt

Directions
  • Step #1 In a large bowl mix the first four ingredients.
  • Step #2 Stir in flour.
  • Step #3 Add eggs; stir well.
  • Step #4 Stir in zucchini, Parmedan cheese, salt & pepper.
  • Step #5 Heat 2 tbsps oil in large nonstick skillet over med-heat/flame.
  • Step #6 Drop batter by tbsps into skillet.
  • Step #7 Cook 3-4 mins.
  • Step #8 , turning once, until golden.
  • Step #9 Remove fritters to baking sheet lined with paper towels.
  • Step #10 Repeat, using remaining oil as needed.
  • Step #11 Arrange on platter.
  • Step #12 Garnish.
