5 Minute Melted Sandwich Recipe

Ingredients
  • 1/4 sliced zucchini or 2 sliced mushrooms .
  • 1/2 c spinach .
  • 3 slices meat (Tofurkey or other vegan deli-style slices) .
  • 2 slices non-dairy bread .
  • 3 slices casein-free cheese (I use Veganrella) .
  • 1/4 yellow bell pepper, in strips

Directions
  • Step #1 Layer the ingredients on the bread -- my style is as follows: "meat", spinach, spinach, "meat", spinach, "meat", veggies, cheese, cheese, cheese.
  • Step #2 Top the sandwich off with another slice of bread, & cut diagonally so you have two classy triangles.
  • Step #3 Microwave until the cheese has melted (about 1 min 30 seconds).
