Pavlova With A Passionfruit Curd Recipe

Ingredients
  • 2 extra egg yolks .
  • Passionfruit curd .
  • 1 1/4 c heavy cream .
  • 1 tsp white wine vinegar .
  • 1 tbsp hot water .
  • 2/3 c superfine sugar .
  • 5 tbsps passion fruit .
  • 2 egg yolks .
  • 4 egg whites .
  • 1/4 c sugar .
  • 1 oz unsalted butter, cut into small dice

Directions
  • Step #1 Preheat oven to 300F degrees.
  • Step #2 Oil a large piece of baking parchment on a baking sheet.
  • Step #3 Put the egg whites, vinegar, & hot water into the bowl of a food mixer & whisk at the highest speed for 5 mins until soft, sugar, white peaks form.
  • Step #4 Spoon the mixture into an 8 inch round on the oiled paper -- or spoon 4 high rounds on the paper to make the individual pavlovas.
  • Step #5 Cook in the center of the oven for about one hr & ten mins, until crisp.
  • Step #6 (The individual pavlovas will take less time, about 1 hr) Allow to cool on wire rack.
  • Step #7 To make the passionfruit curd, put all the ingredients into a bowl set over a pan of simmering water & stir constantly until the mixture starts to thicken & take on the appearance of a thin custard.
  • Step #8 Continue to cook, still stirring, until it thickens further, about 10 mins.
  • Step #9 Remove from the heat as soon as possible so as not to overcook.
  • Step #10 Ladle the curd into a clean jar or container, & leave to cool before covering & refrigerating.
  • Step #11 To serve, whip the cream into soft peaks & place onto the pavlova base spreading out to the edges with a palette knife.
  • Step #12 For the individual pavlovas, place a spoonful of cream on top of each pavlova.
  • Step #13 Pour the passionfruit curd over the top.
  • Step #14 makes 4 servings.
