Chicken Creole Recipe

Ingredients
  • 4 skinless, boneless chicken breasts
  • 1 green bell pepper, minced
  • 1/8 tsp cayenne pepper
  • 2 (16 oz) cans sliced tomatoes
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 stalk celery, sliced thin
  • 1 onion, thinly sliced
  • 1/2 tsp salt
  • 1 bay leaf

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a large skillet, heat the oil over med-heat/flame.
  • Step #3 Add the garlic, onion, celery & bell pepper.
  • Step #4 Cook, stirring every once in awhile, until tender (about 4 mins).
  • Step #5 Add the tomatoes, bay leaf, salt & cayenne pepper.
  • Step #6 Cook this Creole sauce 3 mins longer, stirring often.
  • Step #7 Arrange the chicken breasts in an 8 x 11 inch baking dish.
  • Step #8 Pour the Creole sauce over the chicken.
  • Step #9 Bake 15 to 20 mins, until the chicken is tender & white throughout.
