Chicken Pot Pie Recipe

Ingredients
  • 3 large carrots (sliced) .
  • 3 celery ribs (sliced) .
  • 1 c frozen peas .
  • 1/4 c cornstarch .
  • 1 tsp Dijon mustard .
  • 1 1/2 c chicken broth .
  • 2 medium onions (sliced) .
  • 1 3/4 c oat milk, oats are not gluten free .
  • 1/2 tsp salt .
  • 2 c cooked chicken (sliced) .
  • 1 tbsp olive oil .
  • 3 yukon gold potatoes (sliced) .
  • 2 c gluten-free flour .
  • 1/4 c canola oil .
  • 1 tsp baking powder .
  • 1 tsp worcestershire sauce .
  • 1 1/2 c mushrooms (sliced)

Directions
  • Step #1 For the filling in large pan over medium-high heat mix onions, celery, potatoes, peas, mushrooms, carrots, & olive oil.
  • Step #2 Cook until tender about 10 mins.
  • Step #3 While Vegetable mixture is cooking mix cornstarch & 1 c oat milk & stir until smooth.
  • Step #4 Add dijon & worcestershire sauce & stir until smooth.
  • Step #5 Add sliced chicken & chicken broth to vegetables & bring to boil.
  • Step #6 Add cornstarch mixture & let simmer stirring every once in awhile for 5 mins.
  • Step #7 For topping mix flour, 1 Teaspoon baking powder, 1/4 tsp salt & mix in 3/4 c oatmilk, & 1/2 c canola oil.
  • Step #8 Mix well adding flour as needed just until not sticky.
  • Step #9 Roll out topping to 1/4 thickness.
  • Step #10 Place filling into pie pan(s) & cover with topping.
  • Step #11 Cook 10-15 mins until golden brown.
  • Step #12 Allow to cool at least 15 mins before serving.
  • Step #13 Topping.
