Finnish Summer Vegetable Soup (kesäkeitto) Recipe

Ingredients
  • 1/8 tsp pepper .
  • 2 c water .
  • 1/4 c whipping cream .
  • 1/4 small cauliflower, separated into florets .
  • 2 tbsps all-purpose flour .
  • 1 medium potato, cubed .
  • 2 small carrots, sliced .
  • 2 oz fresh spinach, cut up (2 c) .
  • 1 1/2 tsps salt .
  • 2 c milk .
  • 2 tbsps snipped dill weed or parsley .
  • 1 c cut fresh green beans or frozen green beans .
  • 3/4 c fresh green peas or frozen green peas

Directions
  • Step #1 Heat water, carrots, peas, potato, beans & cauliflower to boiling in 3-quart saucepan; reduce heat.
  • Step #2 Cover up & let simmer until vegetables are almost tender, 10 to 15 mins.
  • Step #3 Add spinach; cook uncovered about 1 min.
  • Step #4 Mix 1/4 c of the milk & the flour; stir slowly into vegetable mixture.
  • Step #5 Boil & stir 1 min.
  • Step #6 Stir in remaining milk, the whipping cream, salt & pepper.
  • Step #7 Heat just until hot.
  • Step #8 Garnish each serving with dill weed.
