Ingredients
1/4 c sliced pecans .
1 tsp lemon juice .
vegetable oil .
1/4 tsp cinnamon .
1 tsp cornstarch .
1 tbsp sugar .
2 tbsps finely sliced crystallized ginger .
Pancakes .
1 tbsp sugar .
1/2 c milk .
1 egg, beaten .
1 1/2 tsps baking powder .
1/8 tsp salt .
1 1/2 tbsps butter, melted .
1 small pear, very ripe, peeled, cored, seeded, & minced .
1 large ripe pear, peeled, cored, seeded, & sliced fine .
Pear & Ginger Sauce .
1/2 c all-purpose flour .
1/4 tsp salt
Directions
Step #1 To make sauce:.
Step #2 Stir cornstarch with 2 tbsps water in a c.
Step #3 Pour into a small, heavy-bottomed saucepan.
Step #4 Stir in pear, cinnamon, crystallized ginger, sugar, & salt.
Step #5 Cover up & let simmer for five mins or until pear is tender & pulpy.
Step #6 Remove from heat.
Step #7 Stir in lemon juice.
Step #8 Set sauce aside.
Step #9 To make pancakes:.
Step #10 Stir together milk, melted butter, & egg in a small bowl.
Step #11 Stir together flour, baking powder, sugar, & salt In a large-ishr bowl.
Step #12 Pour in milk mixture.
Step #13 Mix just to mix ingredients.
Step #14 Don't beat.
Step #15 Stir in pear & pecans.
Step #16 Coat a griddle or large heavy-bottomed skillet with oil.
Step #17 Heat over med-heat/flame for thirty seconds.
Step #18 Add batter by 1/4 c measure.
Step #19 Cook pancakes until bubbles form on surface & edges are browned.
Step #20 Flip over & cook second side until golden brown.
Step #21 Drizzle ginger & pear sauce over pancakes & serve warm.
