Pear And Pecan Pancakes With Pear And Ginger Sauce Recipe

Ingredients
  • 1/4 c sliced pecans .
  • 1 tsp lemon juice .
  • vegetable oil .
  • 1/4 tsp cinnamon .
  • 1 tsp cornstarch .
  • 1 tbsp sugar .
  • 2 tbsps finely sliced crystallized ginger .
  • Pancakes .
  • 1 tbsp sugar .
  • 1/2 c milk .
  • 1 egg, beaten .
  • 1 1/2 tsps baking powder .
  • 1/8 tsp salt .
  • 1 1/2 tbsps butter, melted .
  • 1 small pear, very ripe, peeled, cored, seeded, & minced .
  • 1 large ripe pear, peeled, cored, seeded, & sliced fine .
  • Pear & Ginger Sauce .
  • 1/2 c all-purpose flour .
  • 1/4 tsp salt

Directions
  • Step #1 To make sauce:.
  • Step #2 Stir cornstarch with 2 tbsps water in a c.
  • Step #3 Pour into a small, heavy-bottomed saucepan.
  • Step #4 Stir in pear, cinnamon, crystallized ginger, sugar, & salt.
  • Step #5 Cover up & let simmer for five mins or until pear is tender & pulpy.
  • Step #6 Remove from heat.
  • Step #7 Stir in lemon juice.
  • Step #8 Set sauce aside.
  • Step #9 To make pancakes:.
  • Step #10 Stir together milk, melted butter, & egg in a small bowl.
  • Step #11 Stir together flour, baking powder, sugar, & salt In a large-ishr bowl.
  • Step #12 Pour in milk mixture.
  • Step #13 Mix just to mix ingredients.
  • Step #14 Don't beat.
  • Step #15 Stir in pear & pecans.
  • Step #16 Coat a griddle or large heavy-bottomed skillet with oil.
  • Step #17 Heat over med-heat/flame for thirty seconds.
  • Step #18 Add batter by 1/4 c measure.
  • Step #19 Cook pancakes until bubbles form on surface & edges are browned.
  • Step #20 Flip over & cook second side until golden brown.
  • Step #21 Drizzle ginger & pear sauce over pancakes & serve warm.
