Warm Gnocchi Salad Recipe

Ingredients
  • 1/3 c toasted walnuts .
  • 1 tbsp olive oil .
  • 2 garlic cloves, crushed .
  • 1 (340 g) jar marinated artichoke hearts, drained & quartered .
  • 500 g fresh gnocchi (1lb) .
  • 2 tbsps red wine vinegar .
  • 1 red onion, thinly sliced .
  • 1 (270 g) jar char-grilled capsicums, in oil .
  • 1/2 c black olives, pitted .
  • 1/2 c basil leaves, firmly packed

Directions
  • Step #1 Cook gnocchi in large saucepan of boiling water, until they float to the surface & are just tender; drain, uncovered, cover & keep warm.
  • Step #2 Meanwhile, drain capsicum over small jug; reserve 1/3 c of the oil.
  • Step #3 Slice capsicum thinly.
  • Step #4 Combine reserved oil in a screw-top jar with vinegar, garlic & olive oil; shake dressing well.
  • Step #5 Combine capsicum & gnocchi In a large-ish bowl wiht olives, onion, artichokes, basil & dressing; toss carefully to mix, serve topped with nuts.
