Chocolate Mousse Pie Recipe

Ingredients
  • 2 tbsps unsweetened cocoa powder
  • 1/4 c white sugar
  • 1 c heavy whipping cream
  • 4 tbsps water
  • 2 tbsps white sugar
  • 1 tbsp instant coffee powder
  • 1 c semisweet chocolate chips
  • 1/2 c heavy whipping cream
  • 2 tbsps confectioners' sugar
  • 3 eggs
  • 1/2 tsp almond extract
  • 1 tsp unflavored gelatin
  • 1 tsp vanilla extract
  • 1 (9 inch) pie shell, baked
  • 1/2 tsp vanilla extract

Directions
  • Step #1 Sprinkle top the gelatin on top of 2 tbsps water.
  • Step #2 Separate the eggs.
  • Step #3 In a small saucepan, 2 tbsps water, 1/4 c sugar, heat chocolate, & coffee; stir constantly until melted.
  • Step #4 Add softened gelatin to tha saucepan, & heat until completely dissolved.
  • Step #5 Remove pan from heat, & slowly beat in egg yolks.
  • Step #6 Return to pan to heat.
  • Step #7 Cook until mixture thickens slightly, stirring constantly.
  • Step #8 Remove from heat, & stir in the 1 tsp vanilla.
  • Step #9 Cool slightly.
  • Step #10 While chocolate mixture is cooling, beat egg whites to soft peaks.
  • Step #11 Gradually add 2 tbsps sugar, & beat until stiff but not dry.
  • Step #12 Fold whipped egg whites into chocolate mixture.
  • Step #13 Whip 1/2 c cream until stiff, & fold into chocolate mixture.
  • Step #14 Spoon into pie crust.
  • Step #15 Chill.
  • Step #16 To Make Topping: Add cocoa & confectioners' sugar to 1 c whipping cream.
  • Step #17 Chill mixture 30 mins, then whip until stiff.
  • Step #18 Stir in almond extract & 1/2 tsp vanilla extract.
  • Step #19 Top the pie with this chocolate whipped cream.
  • Step #20 Chill several hrs or overnight until set.
  • Step #21 Filling with be a little soft.
