Blueberry Muffins Recipe

Ingredients
  • 1 c blueberries .
  • 1 tsp cinnamon .
  • 1/2 c canola oil .
  • 1 1/2 c all-purpose flour (gluten-free) .
  • 1 1/2 tsps lemon peel .
  • 1 large egg .
  • 1/4 tsp xanthan gum .
  • 2 tsps baking powder .
  • 1/4 tsp salt .
  • 1/2 c skim milk .
  • 3/4 c sugar

Directions
  • Step #1 Preheat oven to 350 F: Grease standard muffin tin.
  • Step #2 In a medium mixing bowl mix, salt, flour, baking powder, sugar, xantham gum, & cinnamon.
  • Step #3 Make a well in the center of the flour mix & add lemmon peel, oil, milk, & egg.
  • Step #4 Blend thoughly with fork until smooth, then fold in berries (Be careful not to over mix).
  • Step #5 If batter is to thick add equal amounts of oil & milk till right consistancy is obtained.
  • Step #6 Place batter into prepared mufin tin.
  • Step #7 Bake for 20-25 minuets or until a toothpick inserted in the center comes out clean wih a few crumbs on it.
  • Step #8 cool muffins for 5 minuets in tin before removing to wire rack to cool.
  • Step #9 Serve warm or cold.
  • Step #10 For fresh muffins every day, line muffin tin with ccake holders & spoon in batter them.
  • Step #11 Place muffin tin in freezer.
  • Step #12 When batter is frozen remove this from tin & place this in sealed container in freezer.
  • Step #13 Now when you need a fresh muffin just pop a frozen one in the oven & presto.
