Zucchini Moussaka Recipe

Ingredients
  • 1 (8 oz) can tomato sauce .
  • 3/4 tsp salt .
  • 4 small zucchini, unpeeled, sliced 1/4 inch thick (or substitute eggplant, also unpeeled) .
  • 1 c feta cheese, broken up with fork .
  • 1/2 c grated parmesan cheese or romano cheese .
  • 2 tbsps olive oil .
  • 1 large onion, cut in half & sliced .
  • 1/2 tsp cinnamon .
  • 1 1/4 lbs ground lamb .
  • 1 garlic clove, minced

Directions
  • Step #1 1.
  • Step #2 Heat oil in large skillet.
  • Step #3 Add zucchini & onion.
  • Step #4 Saute about 3-5 mins, until the onion is softening.
  • Step #5 Remove from pan & put in 2 1/2 quart baking dish.
  • Step #6 Set aside.

  • Step #8 In the same skillet brown the lamb, breaking up large chunks.
  • Step #9 Drain off grease.

  • Step #11 In small bowl mix tomato sauce, garlic, salt & cinnamon.
  • Step #12 Add to skillet, Mix well & let simmer the mixture a few mins (about 5.

  • Step #15 Spread meat mixture over the zucchini.
  • Step #16 Sprinkle top feta cheese & Parmesan evenly over top, covering meat completely.
  • Step #17 Bake at 350 degrees for 30 mins.
