California Rice Salad Recipe

Ingredients
  • 1 tsp salt .
  • 1-2 tsp sugar, to taste .
  • 1/4 c fresh scallions, sliced .
  • 1 tbsp whole grain mustard .
  • 1/4 c white wine vinegar .
  • 1/2 c red onions, sliced .
  • 1 c basmati rice (or Wehani-a red hybrid grown in California) .
  • 2 tbsps fresh dill, sliced (or 2 tsp. dried) .
  • 2 beets, cooked, peeled, & sliced (about 1 1/2 c) .
  • fresh ground black pepper, to taste .
  • 1 1/2 tbsps prepared horseradish .
  • 1/2 c extra virgin olive oil .
  • 1/2 c red bell peppers, sliced .
  • Dressing .
  • 6 radishes, halved & sliced 1/4-inch thick

Directions
  • Step #1 Cook rice according to directions on package.
  • Step #2 You should have about 3 c.
  • Step #3 Allow it to cool to about room temp.
  • Step #4 Combine the rice, beets, red onion, chives, radishes, bell pepper, & dill In a large-ish bowl.
  • Step #5 Toss well.
  • Step #6 Make the dressing:.
  • Step #7 Whisk the vinegar, mustard, sugar, salt, horseradish, & pepper together in a small bowl.
  • Step #8 Gradually add the oil, whisking until it is smooth.
  • Step #9 Pour the dressing over the rice mixture & toss until well mixed.
  • Step #10 Serve as soon as possible, or cover & put in the fridge for a few hrs to mix the flavors.
