2 large apples, red & tart, unpeeled, cored & cut into 1/2-inch thick rings .
2 tbsps butter .
fresh ground pepper, to taste .
1 lb Canadian bacon
Directions
Step #1 In a heavy skillet, melt butter.
Step #2 When foam subsides, add the bacon & fry for 5 to 10 mins or until the bacon is lightly browned.
Step #3 Remove bacon from skillet & set on paper towel lined plate to drain.
Step #4 In same skillet used for bacon, fry the onion slices for 6 to 8 mins adding more butter as necessary.
Step #5 When the onions are soft & transparent, add the apple rings.
Step #6 Put lid on skillet & let simmer apples over low heat/flame for 5 to 10 mins.
Step #7 Carefully stir apples to keep them from sticking.
Step #8 When the apple rings are done, they should offer little or no resistence when pierced with the tip of a sharp knife, return the drained bacon to the skillet.
Step #9 Cover up skillet & let simmer an extra 3 to 5 mins or until the bacon is heated through.
Step #10 Liberally grind fresh black pepper over the top & serve as soon as possible.
