Norwegian Coleslaw Recipe

Ingredients
  • 1 small sweet red pepper, sliced .
  • 1 1/2 c sugar .
  • 1 medium head of cabbage .
  • 2 carrots, shredded .
  • 1 c white vinegar .
  • 1 tbsp salt .
  • 1 tsp mustard seeds .
  • 2 c celery, sliced .
  • 1 small green pepper, sliced .
  • 1 tsp celery seeds

Directions
  • Step #1 Shred cabbage & toss with salt.
  • Step #2 Cover up & put in the fridge at least 2 hrs.
  • Step #3 Meanwhile, vinegar, in a saucepan heat the sugar, & seeds, simmering 10 mins.
  • Step #4 Cool completely.
  • Step #5 Add to the cabbage along with the remaining vegetables.
  • Step #6 Cover up & put in the fridge at least 24 hrs before serving (longer is better).
  • Step #7 Keeps 4-6 weeks in the refrigerator.
