Cottage Cheese Loaf Recipe

Ingredients
  • 1/2 c sliced walnuts
  • 3 eggs
  • 1 c packed brown sugar
  • 1 c cottage cheese
  • 1 3/4 c all-purpose flour
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 1/2 c candied mixed fruit peel
  • 1/2 tsp baking soda

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease one 9x5x3 inch loaf pan.
  • Step #3 Smooth cottage cheese in a mixer or force through strainer.
  • Step #4 Put into bowl.
  • Step #5 Beat in sugar.
  • Step #6 Add eggs one at a time, beating well after each addition.
  • Step #7 Set aside.
  • Step #8 Measure flour, salt, soda, baking powder, walnuts, & mixed peel into a second bowl.
  • Step #9 Mix together well.
  • Step #10 Pour into first bowl.
  • Step #11 Stir to moisten.
  • Step #12 Scrape into greased 9x5x3 inch loaf pan.
  • Step #13 Bake at 350 degrees F (175 degrees C) for about 1 hr.
  • Step #14 Cool for 10 mins before turning out to finish cooling on rack.
  • Step #15 Wrap well.
  • Step #16 Serve with butter.
