Ingredients
1/2 c capers, rinsed .
2 large sweet onions, sliced into rings .
20 oz fresh mushrooms (I used baby bellas & button) .
10 c fresh baby spinach .
2 tbsps olive oil .
4 tbsps sweet butter .
1 tbsp green peppercorns .
1-1 1/2 c flour .
1 tsp sliced fresh thyme .
7 lbs chicken breasts, lbed & sliced into strips .
1 tsp salt .
1/2 c sliced sun-dried tomatoes packed in oil .
2 tbsps butter .
1 tsp garlic powder .
1/4 c oil, for browning if needed .
1/3-1/2 c toasted pine nuts .
6 garlic cloves, minced .
1 tsp fresh cracked pepper .
3 tbsps sliced fresh parsley
Directions
Step #1 Heat oil & butter In a large-ish pan heavy bottom pan.
Step #2 Saute onions & garlic 3-4 mins till translucent.
Step #3 Remove onions & garlic leaving oil in pan set aside.
Step #4 Mix flour, salt, pepper & garlic powder together.
Step #5 Toss chicken in flour mixture to coat chicken strips.
Step #6 In the same pan add oil if needed.
Step #7 Lightly brown chicken strips on all sides.
Step #8 Do not crowd pan.
Step #9 Repeat till all strips are browned.
Step #10 Adding extra oil as needed.
Step #11 When all chicken is browned drain oil & discard.
Step #12 To the pan add broth, capers, tomatoes, thyme, parsley, & peppercorns scraping all the goodness (brown bits) from the bottom of the pan.
Step #13 Add mushrooms & butter bring to a boil toss in chicken to heat.
Step #14 Toss the baby spinach with the onions.
Step #15 Place spinach in chafing 3 dishes top this with 1/3 of the chicken mixture on each bed of spinach.
Step #16 The cooked chicken will wilt the spinach.
Step #17 Garnish with pine nuts.
Step #18 Sit back & watch it disappear.
