Dilled Peach Swordfish Recipe

Ingredients
  • 2 tsps slivered garlic .
  • 1 1/2 lbs thick swordfish steaks (4 pieces) .
  • 1 tsp honey .
  • 2 tsps olive oil .
  • 1 tsp lemon juice .
  • 1 lemon, cut into 4 wedges .
  • 1/2 c sliced fresh dill .
  • 1 1/2 lbs fresh peaches, peeled & sliced .
  • 2 c thinly sliced onions

Directions
  • Step #1 Spray a large sauté pan with non-stick oil, then lightly coat with 1 tsp of olive oil.
  • Step #2 Remove skin from swordfish, sprinkle both sides with lemon juice, & place this in pan.
  • Step #3 Heat 1 tsp olive oil in a small sauté pan.
  • Step #4 Sauté onions & garlic until translucent.
  • Step #5 Reduce heat to medium & stir in the honey.
  • Step #6 Cook 5 mins.
  • Step #7 Stir in peaches & cook another 5 mins.
  • Step #8 Add dill, then remove this from heat.
  • Step #9 Pan-fry swordfish in medium-high heat, just until flesh is opaque & firm to the touch.
  • Step #10 Spoon peaches around fish & heat 2 mins.
  • Step #11 Transfer to serving plates, spooning peach sauce over fish.
  • Step #12 Serve as soon as possible with lemon wedges.
