Meaty Peach Pie
Ingredients
2 tsps slivered garlic .
1 1/2 lbs thick swordfish steaks (4 pieces) .
1 tsp honey .
2 tsps olive oil .
1 tsp lemon juice .
1 lemon, cut into 4 wedges .
1/2 c sliced fresh dill .
1 1/2 lbs fresh peaches, peeled & sliced .
2 c thinly sliced onions
Directions
Step #1 Spray a large sauté pan with non-stick oil, then lightly coat with 1 tsp of olive oil.
Step #2 Remove skin from swordfish, sprinkle both sides with lemon juice, & place this in pan.
Step #3 Heat 1 tsp olive oil in a small sauté pan.
Step #4 Sauté onions & garlic until translucent.
Step #5 Reduce heat to medium & stir in the honey.
Step #6 Cook 5 mins.
Step #7 Stir in peaches & cook another 5 mins.
Step #8 Add dill, then remove this from heat.
Step #9 Pan-fry swordfish in medium-high heat, just until flesh is opaque & firm to the touch.
Step #10 Spoon peaches around fish & heat 2 mins.
Step #11 Transfer to serving plates, spooning peach sauce over fish.
Step #12 Serve as soon as possible with lemon wedges.
