Spinach And Feta Muffins Recipe

Ingredients
  • 2 c fresh spinach (packed firmly) .
  • 1/2 tsp salt .
  • 2 c milk .
  • 1/2 tsp nutmeg .
  • 4 2/3 c plain flour .
  • 200 ml vegetable oil .
  • 150 g sliced feta cheese .
  • 1 egg .
  • 1/2 tsp ground black pepper

Directions
  • Step #1 Pre heat the oven to 190'C fan bake or 200'C regular bake.
  • Step #2 Put the oil, egg, milk & spinach into a a food processor/blender & process until finely sliced.
  • Step #3 In another bowl mix all the dry ingredients together & then fold through the feta cheese until it is coated.
  • Step #4 Add the spinach mixture & mix until just mixed.
  • Step #5 Place in greased muffin tins & fan bake for approx 25 mins.
  • Step #6 Remove from oven & leave in pans for a few mins before placing on a wire rack to cool.
  • Step #7 Serve warm or cold.
  • Step #8 *Note: you can also add in some sliced sundried tomato, sliced spring onions or sliced red or green capsicums to vary the flavour.
