2 eggs, room temperature (can use only 1 egg if desired) .
3 tsps dry yeast .
1/2 c melted butter .
sesame seeds .
4-6 c flour (more as needed) .
1/3 c sugar .
1 1/4 tsps salt
Directions
Step #1 Prepare a 13 x 9-inch baking dish (preferably metal).
Step #2 In a c proof yeast with 1 tsp sugar in 1/2 c warm water for 10 mins, or until foamy.
Step #3 In the stainless steel mixing bowl add in melted butter, skim milk powder, salt, eggs, 1/3 c sugar & about 3-1/2 c flour.
Step #4 Add in the proofed yeast with remaining 1 c warm water.
Step #5 With a heavy-duty stand mixer fitted with the kneader blade (this can also be done by hand) start mixing on lowish speed adding more flour as needed to create a soft semi-sticky smooth dough (do not add in too much flour as buns will be tough).
Step #6 Knead for about 8 mins.
Step #7 Place the dough on a slightly floured counter or board, & let rest for about 5 mins.
Step #8 Gather dough & shape into a ball.
Step #9 Lightly grease the dough all over with oil.
Step #10 Place in a greased bowl to rise.
Step #11 Cover up with a clean dish towel, & rise for about 1-1/2 hrs, or until doubled (it might take longer than 1-1/2 hrs).
Step #12 Punch down dough & shape into about 16-20 evenly-sized oval balls.
Step #13 Place the dough balls in baking pan (making 4 rows with 4 balls across, any leftover dough balls can be frozen).
Step #14 Cover up & rise again for about 45-50 mins, or until doubled (it might take about 1 hr for the second rise, depending on the temperature of your kitchen).
Step #15 At this point I mix/whisk 1 egg white with 1 tsp water, then sprinkle sesame seeds over, & lightly brush over tops of dough balls, but this is only optional.
Step #16 Bake at 375° for 15-17 mins or until golden brown.
