Curried Lentil And Lime Soup Recipe

Ingredients
  • 2 garlic cloves, finely sliced .
  • 1 tsp cumin seeds .
  • 200 g red lentils .
  • 2 tbsps sliced fresh mint .
  • 1 1/2 liters chicken stock or vegetable stock (2 1/2 pts) .
  • 50 g small sultanas (2oz) .
  • 1 tbsp hot curry paste .
  • 1 lime, juice & zest of .
  • 4 cm piece fresh gingerroot, peeled & finely sliced (1 1/2 in) .
  • 4 naan bread (or chapattis, to serve) (optional) .
  • salt & pepper .
  • 1 onion, finely sliced .
  • 150 g plain fat-free yogurt

Directions
  • Step #1 Place the curry paste, onion, garlic, ginger & cumin seeds In a large-ish pan & cook carefully together for 3 mins.
  • Step #2 Add the lentils & stock, bring to the boil & let simmer carefully for 20 mins.
  • Step #3 Add the sultanas & cook for a further 10 mins.
  • Step #4 Add the lime zest & juice, plus salt & pepper to taste (you probably don't need to add salt but check to make sure).
  • Step #5 Ladle into bowls & top each serving with a large spoonful of yogurt (don't mix the yogurt) & a sprinkling of mint.
  • Step #6 Serve with warm chapatis.
