Step #1 Cut parsnips lengthwise into 1/16-inch slices, using a mandoline or knife (a food processor/blender using the slicing disc will also work well).
Step #2 ***If desired the parsnips can be prepared 4 hrs ahead before frying - by dropping parsnip slices into a large bowl, covering the parsnip slices with cold water, draining well before continuing.

Step #4 Heat oil in a deep fryer or large saucepan to 325F - degrees F.
Step #5 Add parsnips in batches & fry until limp (30 seconds to 1 min).
Step #6 Transfer fryed parsnips to paper towels, using a sloted spoon.
Step #7 Continue frying until all parsnips are done.
Step #8 Heat oil (a second time) to 375-degrees F.
Step #9 Add parsnips in batches & fry until golden & crisp (2 mins).
Step #10 Drain on paper towels & sprinkle with salt.
