Farina Dumplings (gnocchi Alla Romana) Recipe

Ingredients
  • 1 c parmesan cheese, grated .
  • 1 tbsp butter .
  • 1 c farina or semolina .
  • 1 dash pepper .
  • 1 tsp salt .
  • 1/4 c margarine .
  • 3 c milk .
  • 2 eggs, beaten

Directions
  • Step #1 In a medium saucepan, heat milk to scald.
  • Step #2 Reduce heat & slowly stir in the farina, cook this until thick, approximately five mins.
  • Step #3 Remove pan from heat, margarine, salt, stir in the eggs, pepper & beat until smooth.
  • Step #4 Spread mixture into a greased 13 x 9-inch pan, let cool.
  • Step #5 Cover up pan & put in the fridge for 2 to 3 hrs until firm.
  • Step #6 *Note* Refrigeration time for gnocchi to firm is included in the preparation time.
  • Step #7 When firm, remove this from refrigerator & cut gnocchi into 1 1/2 inch squares or circles.
  • Step #8 Place them overlapping, into an ungreased baking dish.
  • Step #9 Dot tops with 1/4 c margarine & sprinkle with cheese.
  • Step #10 Bake at 350 degrees for 30 mins or until brown.
  • Step #11 If needed you can brown a little more under the broiler.
