Suomalaisruisleipä (finnish Rye Bread) Recipe

Ingredients
  • 1 tbsp packed brown sugar .
  • butter, softened .
  • 1 1/2-2 c all-purpose flour .
  • 1 1/4 c warm potato water (105 to 115 degrees F or) .
  • 1 1/4 c medium rye flour .
  • 1 1/2 tsps salt .
  • 1 tbsp vegetable oil .
  • 2 1/4 tsps active dry yeast (equilavents listed at bottom of recipe)

Directions
  • Step #1 Dissolve yeast in warm water in large bowl.
  • Step #2 Stir in brown sugar, oil, salt & 1 c of the rye flour.
  • Step #3 Beat until smooth.
  • Step #4 Stir in enough all-purpose flour to make the dough easy to handle.
  • Step #5 Turn dough onto surface that has been sprinkled with the remaining rye flour.
  • Step #6 Cover up; let rest 10 to 15 mins.
  • Step #7 Knead until smooth & elastic, about 5 mins.
  • Step #8 Place in greased bowl; turn greased side up.
  • Step #9 Cover up; let rise in warm place until double, about 1 hr.
  • Step #10 Dough is ready if indentation remains when touched.
  • Step #11 Punch down dough; shape into a round, slightly flat loaf.
  • Step #12 Place in greased 9 x 1 1/2-inch round pan.
  • Step #13 Cover up; let rise until double, about 1 hr.
  • Step #14 Preheat oven to 375 degrees F.
  • Step #15 Bake until loaf sounds hollow when tapped, 40 to 50 mins.
  • Step #16 Immediately remove this from pan.
  • Step #17 Brush top of loaf with butter; cool on wire rack.
  • Step #18 Note: Yeast Equivalents are One package = 2 1/4 tsps = 1/4 oz.
