Hungarian Noodles And Cabbage Recipe

Ingredients
  • fresh ground black pepper, to taste .
  • 1 tbsp poppy seeds .
  • 1 (12 oz) package egg noodles .
  • 2 leeks, thoroughly washed, outer leaves removed, sliced .
  • 2 tbsps olive oil (probably more than this if you don't use a non-stick pan) .
  • 1 yellow onion, sliced (American) or brown onion, sliced (Australian) .
  • 1 (3 lb) savoy cabbage, cored, outer leaves removed, shredded (about 8 c) .
  • 1 tbsp granulated sugar .
  • 6 garlic cloves, sliced

Directions
  • Step #1 Heat the oil In a large-ish non-stick pan; add the sugar & heat carefully until the sugar browns.
  • Step #2 Add the onions, garlic & leeks; cook this until they start to wilt.
  • Step #3 Stir in the cabbage; sauté, until the cabbage has softened, stirring frequently, about 20 mins.
  • Step #4 Spice up to taste with pepper, & transfer the cabbage mixture & pan juices to a large bowl & keep warm.
  • Step #5 Cook the noodles according to the packet instructions, then drain.
  • Step #6 (Alternatively, using pre-cooked vacuum-packed noodles works well, & saves time).
  • Step #7 Quickly toss the noodles with the cabbage mixture & the poppy seeds.
  • Step #8 Serve as soon as possible.
  • Step #9 Notes: Traditionally, this noodle & cabbage dish is served with sour cream.
  • Step #10 It's certainly delicious with the sour cream.
