Sicilian Anchovy Pasta Recipe

Ingredients
  • 1 small onion, minced .
  • 1 garlic clove, minced .
  • fresh ground black pepper .
  • 1 lb pasta .
  • 2 (4 oz) cans anchovies packed in oil, sliced

Directions
  • Step #1 I dont remember how big the anchovy cans are, but they are those little oblong cans twith the fillets in olive oil.
  • Step #2 Cook pasta, open the anchovy cans & use the olive oil in them to coat the pasta so it doesnt stick together.
  • Step #3 set aside.
  • Step #4 Add more olive oil to a skillet, enough to coat all the pasta well later on.
  • Step #5 (Not much since it is already coated).
  • Step #6 Saute the garlic & onions in the olive oil.
  • Step #7 Add the sliced ahchovies & a good bit of pepper.
  • Step #8 (a lot of black pepper is good in this).
  • Step #9 Pour the mixture over pasta & mix well to coat all the pasta, serve as it is with no cheese or other toppings.
  • Step #10 **If you add fresh sliced basil & a touch of lemon juice, it completely changes the dish.
  • Step #11 I like both of them.
