Creamed Spinach With Jalapenos Recipe

Ingredients
  • 2/3 c shredded pepperjack cheese
  • 1/4 c fat-free evaporated milk
  • ground black pepper to taste
  • 1/2 tsp celery salt
  • 1 tbsp all-purpose flour
  • 1/4 c butter, divided
  • 1/4 c bread crumbs
  • 1 clove garlic, pressed
  • 1 fresh jalapeno pepper, minced
  • 1 (10 oz) package frozen spinach
  • 2 tbsps minced onion

Directions
  • Step #1 Preheat oven to 300F degrees F (150 degrees C).
  • Step #2 Butter a small casserole dish.
  • Step #3 Place the spinach in a microwave-safe bowl, & cook in the microwave 5 mins on High, until heated through.
  • Step #4 Drain, reserving 1/2 c liquid.
  • Step #5 Melt 2 tbsps butter in a small saucepan over med-heat/flame, & stir in the the bread crumbs until coated.
  • Step #6 Remove from heat, & set aside.
  • Step #7 Melt remaining 2 tbsps butter in a medium saucepan over med-heat/flame.
  • Step #8 Stir in flour.
  • Step #9 Mix in onion & garlic, & cook 1 min.
  • Step #10 Gradually stir in the reserved spinach liquid, cheese, evaporated milk, & jalapeno.
  • Step #11 Spice up with celery salt & pepper.
  • Step #12 Mix in the spinach.
  • Step #13 Transfer to the prepared casserole dish, & top this with bread crumbs.
  • Step #14 Bake 45 mins in the preheated oven, until bubbly & lightly browned.
