Ingredients
4 oz breadcrumbs (8 tbsp.) .
lemons, zest of .
2 oz stoned raisins .
2 tbsps lemon juice .
3 eggs .
1/4 c orange juice .
1/2 c madeira wine .
1/2 c sugar .
1 pinch salt .
3 oz demerara sugar .
1 c boiling water .
2 egg whites .
4 oz suet (shortening may be substituted) .
3 oz lemon marmalade .
1 oz cornflour or rice flour .
Madeira Sauce .
Pudding
Directions
Step #1 Mix the suet, breadcrumbs, cornflour & salt together.
Step #2 Add the grated lemon rind & sugar.
Step #3 grease the inside of a basin & press about half the raisins on to the greased surface.
Step #4 Beat the eggs & add with the remaining raisins to the mixture.
Step #5 Pour into the basin.
Step #6 Cover up & boil for 12 hrs.
Step #7 Madeira Sauce:.
Step #8 Combine the wine & OJ & freeze until semi formed.
Step #9 Remove from freezer & set aside.
Step #10 Beat the egg whites until frothy & set aside.
Step #11 Combine the boiling water & sugar; stir until the sugar is dissolved.
Step #12 Pour the syrup slowly over the egg whites.
Step #13 Set the conatiner of the mixd egg whites & syrup into a pan of salted ice-water; stir until cold.
Step #14 Add the syrup to the wine.
Step #15 Note: This is alchoholic & not reccomended for children.
Step #16 If you do wish to serve it for children, boil the wine first.
Step #17 Pour over the pudding to serve.
Step #18 To serve heated instead of chilled, do not freeze the wine & juice.
Step #19 Instead, mix it with the sugar water & bring to a boil.
Step #20 Then mix with the egg whites.
Step #21 Set the container of the mixd egg whites & syrup into a pan of salted ice water; stir until cold.
Step #22 Slowly reheat until the desired temperature is reached.
