Tarragon Mustard Chicken
Ingredients
1 tsp salt .
1 tsp dried tarragon or 1 tbsp fresh tarragon .
4 boneless skinless chicken breasts, lbed thin .
1/4 c dry white wine .
2 tbsps olive oil .
2 tbsps Dijon mustard .
1 tsp black pepper .
1/2 c heavy cream
Directions
Step #1 Sprinkle top each chicken breast with 1/4 tsp of pepper & 1/4 tsp salt.
Step #2 Heat the olive oil In a large-ish skillet over med-high heat.
Step #3 Add the chicken & sauté until cooked through, turning just once depending upon the thickness, 6-10 mins total time.
Step #4 Transfer to a plate & keep warm.
Step #5 Pour the wine into the skillet to deglaze the pan & cook, stirring to scape up the brown bits, until the wine is reduced by half, about 1 min.
Step #6 Whisk in the cream, continuing to whisk, mustard & tarragon & cook, about 2 mins until thickened.
Step #7 Pour any juices that have accumulated on the plate into the sauce & whisk to mix.
Step #8 Divide the chicken among 4 serving plates & pour some sauce over each portion.
