Ingredients
  • 1 tbsp oil .
  • 1 tbsp balsamic vinegar .
  • 4 yellow squash, sliced .
  • 1 yellow capsicum, seeded & thin sliced .
  • 125 g yellow beans, trimmed .
  • 2 garlic cloves, sliced .
  • 1 leek, trimmed cleaned & sliced .
  • 2 roma tomatoes, sliced .
  • 15 g butter

Directions
  • Step #1 Heat butter & oil in large frying pan.
  • Step #2 Sauté leek & garlic 1 min.
  • Step #3 Toss through remaining vegetables except tomatoes.
  • Step #4 Saute 2 mins.
  • Step #5 Blend through tomatoes & vinegar.
  • Step #6 Cook stirring 1 min more.
  • Step #7 Serve as soon as possible.
