Potato Salad With Lemon And Cilantro Recipe

Ingredients
  • 2 lbs waxy salad potatoes .
  • kosher salt .
  • 1/2 c lightly packed sliced fresh cilantro leaves .
  • 1/2 tsp finely grated lemon zest .
  • 2 green onions, thinly sliced (white & green parts, Or 1 shallot minced) .
  • fresh ground black pepper .
  • 1/2 c extra virgin olive oil .
  • 3 tbsps fresh lemon juice

Directions
  • Step #1 Scrub the potatoes & put into a large pot of salted water.
  • Step #2 Bring to a boil & lower to simmer.
  • Step #3 Cook, partially covered, until the potatoes are tender when pierced with a fork,a bout 25 mins.
  • Step #4 Drain & let cool slightly.
  • Step #5 While the potatoes are still warm, slice them about 1/4 inch thick (there's no need to peel, but discard any pieces of skin that come off on their own).
  • Step #6 Put half the potatoes In a large-ish serving bowl.
  • Step #7 In a small bowl whisk the oil, lemon zest, lemon juice, 1 tsp salt & several grinds of pepper.
  • Step #8 Drizzle on half the dressing.
  • Step #9 Add the remaining potatoes to the bowl, drizzle on the rest of the dressing & toss carefully with a large rubber spatula to mix well.
  • Step #10 Add the cilantro & green onions & toss carefully again.
  • Step #11 Taste & adjust seasonings as needed.
  • Step #12 Serve warm or at about room temp.
