Kettle Stew Recipe

Ingredients
  • salt .
  • 1 small zucchini, sliced (about 2 c) .
  • 1-2 tbsp minced chilies .
  • 1 large garlic clove, minced .
  • 4 small potatoes, cut into chunks (about 2 c) .
  • 3 c undrained canned tomatoes, sliced (28-oz can) .
  • 2 c cut corn (fresh or frozen) .
  • 1 c onions, sliced .
  • 1/2 tsp cinnamon .
  • 3 tbsps olive oil .
  • 1-2 tbsp fresh cilantro, sliced .
  • 2 c cut green beans .
  • 1/4 tsp ground cloves

Directions
  • Step #1 In a large saucepan, saute the onions, garlic & chiles in the oil for about 5 mins.
  • Step #2 Include the seeds from the chiles if you like a hotter stew, discard them if you don't.
  • Step #3 Add the cinnamon, cloves & potatoes, & cook, covered for another 5 mins.
  • Step #4 Stir in the tomatoes & green beans, cover & cook 5 more mins.
  • Step #5 Add the zucchini & corn.
  • Step #6 Simmer, covered, on low heat until all the vegetables are tender.
  • Step #7 If the stew seems too dry, add tomato juice or water.
  • Step #8 Add cilantro & salt to taste.
  • Step #9 Serve topped with grated cheese or sour cream.
