Peach And Prosciutto Salad Recipe

Ingredients

1 peach .
3 peaches .
3 tbsps pine nuts, toasted (optional) .
3 green onions .
6 slices prosciutto .
12 c baby spinach or mesclun .
1/4 tsp salt .
1/3 c vegetable oil .
2 tbsps cider vinegar or white wine vinegar

Directions

Step #1 For dressing, peel peach.
Step #2 Coarsely chop.
Step #3 Place in a mixer or food processor/blender.
Step #4 Add vinegar & salt.
Step #5 Whirl until puréed, then add oil & whirl.
Step #6 Dressing will be quite thick.
Step #7 It will keep well, covered & put in the fridged, up to 3 days.
Step #8 Just before serving, place spinach in a very large bowl.
Step #9 Slice prosciutto into thin strips.
Step #10 Peel peaches, if you wish.
Step #11 Slice in half, then thinly slice into wedges.
Step #12 Thinly slice onions.
Step #13 Add all to spinach.
Step #14 Drizzle with dressing & sprinkle with nuts.
Step #15 Toss to evenly mix.
