Bramble Fool Recipe

Ingredients
  • 375 g blackberries .
  • 25-50 g caster sugar, depending on tartness of berries .
  • 284 ml double cream .
  • 300F ml pint ready-to-serve custard

Directions
  • Step #1 In a saucepan add the blackberries with 2 tablspoons of cold water & sugar.
  • Step #2 Heat carefully until sugar has dissolved, then bubble for 5 mins, till fruit has softened & juices are running.
  • Step #3 Leave to cool.
  • Step #4 Pass through a strainer to remove the pips.
  • Step #5 Whip cream till soft peaks form, then stir in the custard.
  • Step #6 Fold in berries carefully, so it is slightly marbled.
  • Step #7 Spoon into serving dishes & chill till ready to eat.
