Nutmeg-scented Geraniam Jelly Recipe

Ingredients
  • 3 oz liquid pectin .
  • 4 c apple juice .
  • 3 tbsps fresh lemon juice .
  • 1/4 tsp freshly grated nutmeg .
  • 5 c sugar .
  • 2 c nutmeg-scented geranium leaves, washed & dried* .
  • 1-2 drop all-natural green food coloring (optional)

Directions
  • Step #1 Boil the apple juice & geranium leaves for 2 mins in an 8 quart saucepan.
  • Step #2 Strain.
  • Step #3 Let the mixture cool overnight.
  • Step #4 you can do this step several days ahead & put in the fridge the mixture until needed.
  • Step #5 Combine the juice mixture, sugar, & lemon juice in an 8 quart saucepan.
  • Step #6 Boil, stirring frequently, over high heat for 5 mins.
  • Step #7 Add the pectin.
  • Step #8 Return the mixture to a boil, timing it for exactly 1 min.
  • Step #9 Remove the pan from the heat.
  • Step #10 Skim off any form.
  • Step #11 Add the grated nutmeg.
  • Step #12 Add a drop or two of all-natural green food coloring, if using.
  • Step #13 Pour the jelly into clean, sterilized jars, leaving 1/4 inch headspace.
  • Step #14 Wipe jar rims clean, add lids, & tighten rings.
  • Step #15 Process in a boiling-water bath for 5 mins.
  • Step #16 Adjust for altitude, if necessary.
  • Step #17 Let the jars cool, check the seal, label, & then store them for about a week so the flavors can mingle.
  • Step #18 *Note: Always make sure plants have not been sprayed with insecticides.
  • Step #19 If you are growing the plant yourself & you don't want bugs to eat it, spray it with a solution of 1/2 c rubbing alcohol to 2 c water.
