Cashew Chicken Stir-fry Recipe

Ingredients
  • 1/2 c cashews, toasted in oven .
  • 1 garlic clove, minced .
  • 1/4 c soy sauce .
  • 1 tsp sugar .
  • 1 lb boneless chicken breasts, in 1 inch cubes .
  • 1 c frozen pea pods, thawed .
  • 1 tsp minced fresh ginger or 1/4 tsp ground ginger .
  • 2 tbsps dry sherry .
  • 4 c fresh stir fry vegetables .
  • 1 tbsp vegetable oil or peanut oil

Directions
  • Step #1 In a medium bowl, mix soy sauce, ginger, sherry, garlic & sugar.
  • Step #2 Add chicken mix lightly.
  • Step #3 Refrigerate 20 mins.
  • Step #4 Remove chicken from marinade, reserving marinade mixture.
  • Step #5 Heat oil in skillet over med-heat/flame.
  • Step #6 Add chicken; stir-fry 3 to 4 mins or.
  • Step #7 until chicken turns white.
  • Step #8 Stir in vegetables; stir-fry 3 to 4 mins or until tender.
  • Step #9 Dissolve cornstarch in reserved marinade mixture; mixing until well mixed.
  • Step #10 Add to chicken mixture.
  • Step #11 Stir-fry until sauce is thickened.
  • Step #12 Stir in cashews.
  • Step #13 Serve over prepared vegetable fried rice.
