Danish Brewmaster's Beer Stew (bryggerens Pilsnergryde) Recipe

Ingredients
  • 4 tsps butter .
  • 8-10 juniper berries .
  • 1 lb cooled boiled potatoes .
  • 1/2 c non-sweet beer .
  • salt & pepper .
  • 1 dash worcestershire sauce .
  • 10 oz smoked bacon .
  • finely-sliced parsley (for garnish) .
  • 2 bay leaves .
  • 2 tsps granulated sugar

Directions
  • Step #1 Cut bacon into dices & the potatoes into slices.
  • Step #2 Melt butter in a pot & add the sugar.
  • Step #3 Add bacon & fry until the meat is light brown.
  • Step #4 Add the potatoes, beer, Worcestershire sauce & a little water & stir lightly.
  • Step #5 Add the bay leaves, juniper berries & a little salt & pepper.
  • Step #6 Let the stew simmer under cover for 20 mins.
  • Step #7 Spice up to taste with salt, pepper & Worcestershire sauce.
  • Step #8 Sprinkle top with parsley before serving.
