Florida Crab Cakes With Avocado Butter Recipe

Ingredients
  • 2 tbsps mayonnaise .
  • 1 egg, beaten .
  • 1 dash Tabasco sauce .
  • 1 tbsp green onions, minced .
  • 1 avocado, peeled pitted & sliced .
  • 2 tbsps lime juice .
  • 1/2 tsp worcestershire sauce .
  • 1/4 scotch bonnet pepper, chili seeded & minced .
  • 3/4 lb crabmeat .
  • 2 tbsps parsley, sliced .
  • salt .
  • 3 tbsps butter .
  • 1/2 c breadcrumbs .
  • pepper .
  • 1 tbsp Dijon mustard

Directions
  • Step #1 Combine breadcrumbs, dijon, mayonnaise, green onion, parsley, 2 tsp lime juice, chili & worcestershire sauce.
  • Step #2 Mix until mixd.
  • Step #3 Mix in egg into breadcrumb mixture.
  • Step #4 Fold in crabmeat in to the breadcrumb mixture.
  • Step #5 Form into 8 patties.
  • Step #6 Cover up & refridgerate for at least 30 mins.
  • Step #7 Meanwhile in a food processor/blender, lime juice, add avocado, salt & pepper.
  • Step #8 Process until smooth.
  • Step #9 Cover up & refridgerate.
  • Step #10 In skillet melt butter & fry cakes in batches until golden brown.
  • Step #11 About 2-3 mins per side.
  • Step #12 Transfer cakes to paper towel to drain.
  • Step #13 Arrange 2 cakes on 4 plates & put a dolup of avocado butter on top of each.
