Tasty Fat-free Gingerbread Recipe

Ingredients
  • 1 tsp dry mustard .
  • 1 c unbleached white flour .
  • 1/4 tsp salt .
  • 2 tsps ginger (more to taste) .
  • 1/2 tsp allspice .
  • 1 1/2 tsps baking soda .
  • 1/2 c molasses .
  • 1/2 c nonfat plain yogurt or nonfat vanilla yogurt .
  • 5 tbsps cooked mashed sweet potato or winter squash .
  • 1/2 c honey .
  • 1/4 tsp nutmeg .
  • 1 egg white .
  • 1 tsp cinnamon .
  • 1 c whole wheat flour

Directions
  • Step #1 Beat honey & molasses 5 mins.
  • Step #2 Add yogurt, egg white & sweet potato & beat until well mixed.
  • Step #3 Combine dry ingredients & mix well.
  • Step #4 Add wet to dry & mix thoroughly but minimally.
  • Step #5 Pour into a square pan or round cake pan sprayed lightly with Pam.
  • Step #6 Bake in a 350 F oven, 30 mins or until knife/toothpick inserted in center.
  • Step #7 comes out clean.
  • Step #8 Start watching it early - when it starts to brown it's probably becoming overcooked.
