Potato And Green Banana Salad Recipe

Ingredients
  • 1 large sweet onion, sliced .
  • 1 tbsp Dijon mustard .
  • 3 lbs yukon gold potatoes, peeled & cut into 1-inch cubes .
  • 1 c Spanish olives with pimento, sliced .
  • 1/2 c white vinegar .
  • 1/4-1/2 tsp sugar .
  • 1 tsp black pepper .
  • 3/4 c extra-virgin olive oil .
  • 3 lbs greenish-yellow bananas, peeled & sliced into 1-inch pieces (about 7 or 8) .
  • 2 tsps salt (or (to taste)

Directions
  • Step #1 Cook potato cubes in boiling, salted water until firm-tender, about 8 to 10 mins.
  • Step #2 Add sliced bananas to the potato pot during the last min of cooking.
  • Step #3 Drain & rinse with cold water In a large serving bowl, mix the bananas & potatoes with sliced onions, & olives.
  • Step #4 In a small bowl, vinegar, mustard, sugar, whisk together the oil, salt & pepper.
  • Step #5 Pour this dressing over the salad.
  • Step #6 Cover up & put in the fridge at least 2 hrs before serving.
