Mushroom Fondue Recipe

Ingredients
  • 2 c chicken broth .
  • 1 c olive oil .
  • 8 c sliced spinach .
  • 1 c shredded parmesan cheese .
  • 1/4 c sherry wine vinegar .
  • 8 c white mushrooms, quartered .
  • salt & freshly ground black pepper, to taste .
  • 1 white onion, sliced .
  • 1 tbsp sliced garlic .
  • 1/2 c sliced tarragon .
  • 2 c cream

Directions
  • Step #1 Heat 1/2 c of the olive oil In a large-ish saute pan over medium-high heat.
  • Step #2 When the oil is hot add the mushrooms & cook this until they start to brown.
  • Step #3 Make sure not to crowd the pan or the mushrooms will steam instead of searing.
  • Step #4 Remove from pan & set aside.
  • Step #5 Turn the pan to medium heat & add the remaining 1/2 c olive oil, onions & garlic & saute for about 10 mins.
  • Step #6 Add chicken broth & reduce by half.
  • Step #7 Add the cream & reduce by half.
  • Step #8 Add the rest of the ingredients, simmer for 10 mins & season witth salt & pepper to taste.
  • Step #9 Pour mixture into a fondue pot.
  • Step #10 Surround with seared mushrooms.
  • Step #11 Dip the mushroms into the mixture.
