Ingredients
2 c chicken broth .
1 c olive oil .
8 c sliced spinach .
1 c shredded parmesan cheese .
1/4 c sherry wine vinegar .
8 c white mushrooms, quartered .
salt & freshly ground black pepper, to taste .
1 white onion, sliced .
1 tbsp sliced garlic .
1/2 c sliced tarragon .
2 c cream
Directions
Step #1 Heat 1/2 c of the olive oil In a large-ish saute pan over medium-high heat.
Step #2 When the oil is hot add the mushrooms & cook this until they start to brown.
Step #3 Make sure not to crowd the pan or the mushrooms will steam instead of searing.
Step #4 Remove from pan & set aside.
Step #5 Turn the pan to medium heat & add the remaining 1/2 c olive oil, onions & garlic & saute for about 10 mins.
Step #6 Add chicken broth & reduce by half.
Step #7 Add the cream & reduce by half.
Step #8 Add the rest of the ingredients, simmer for 10 mins & season witth salt & pepper to taste.
Step #9 Pour mixture into a fondue pot.
Step #10 Surround with seared mushrooms.
Step #11 Dip the mushroms into the mixture.
