Baked Olives And Feta Cheese Recipe

Ingredients
  • 1 1/2 c mixed imported olives, not pitted, drained (Do NOT use oil cured olives) .
  • 2 tsps minced lemon zest .
  • 1 tbsp sliced fresh thyme .
  • 1/4 tsp dried red pepper flakes .
  • 2 tbsps extra virgin olive oil .
  • 7-8 oz feta cheese (1 piece) .
  • 1 tsp fennel seeds

Directions
  • Step #1 In a small bowl, lemon zest, toss the olives with the thyme, red pepper flakes, fennel seeds & olive oil.
  • Step #2 Lightly oil the bottom of an 8 to 9 inch ovenproof skillet, such as cast iron.
  • Step #3 Place the cheese in the center of the pan, then top this with the marinated olive mixture.
  • Step #4 Use a spatula to get all the goodies out of the olive tossing bowl & some will fall to the side.
  • Step #5 At this point, you can cover & put in the fridge for up to 1 day.
  • Step #6 When ready to bake, heat the oven to 400*F.
  • Step #7 Bake the cheese & the olives for about 20 mins, or until the cheese is soft & gooey.
  • Step #8 Serve as soon as possible, right out of the pan, pitta, crostini, with slices of rustic bread, or Pita chips.
