Strawberry Rhubarb Coffee Cake Recipe

Ingredients
  • 1 c buttermilk .
  • 2 large eggs, slightly beaten .
  • 3 tbsps lemon juice .
  • 4 1/2 c rhubarb, sliced .
  • 24 oz strawberries, sliced .
  • 1 c sugar .
  • TOPPING .
  • 3/4 c sugar .
  • 1 1/2 c sugar .
  • 3 c all-purpose flour .
  • 1 tsp salt .
  • FILLING .
  • 1/2 c cornstarch .
  • 1 tsp baking powder .
  • 1 tsp vanilla .
  • 1 c butter, softened .
  • CAKE .
  • 1/4 c soft butter .
  • 1/2 c flour

Directions
  • Step #1 to make the filling -- mix fruits in saucepan & cook, covered, over med-heat/flame for 5 mins, stirring every once in awhile -- Add lemon juice, sugar & cornstarch.
  • Step #2 Cook, stirring, for 5 mins or until thickened.
  • Step #3 cool.
  • Step #4 to prepare the cake:.
  • Step #5 mix flour, sugar, baking powder, & salt in large bowl.
  • Step #6 cut in butter until mixture is crumbly.
  • Step #7 Beat together buttermilk, eggs & vanilla; add to the flour mixture.
  • Step #8 spread one half of the batter in greased 13x9 pan -- spread fruit over batter.
  • Step #9 spoon remaining batter in small mounds on top of filling.
  • Step #10 mix topping ingredients until crumbly.
  • Step #11 sprinkle it over all.
  • Step #12 bake this at 375* for 45 mins.
  • Step #13 serve slightly warm.
