Cauliflower Pie Recipe

Ingredients
  • pepper .
  • 2 tbsps flour .
  • 2 eggs, lightly beaten .
  • salt .
  • 5 tbsps olive oil .
  • 1 large white cauliflower .
  • 5 large garlic cloves, minced

Directions
  • Step #1 Preheat oven to 450 F & oil a 9 inch pie plate.
  • Step #2 Separate cauliflower florets & discard the core.
  • Step #3 Add florets to large pot of boiling salted water.
  • Step #4 Boil about 15 mins, until fork tender.
  • Step #5 Drain & mash.
  • Step #6 Heat 3 tbsp oil in large skillet, & add garlic.
  • Step #7 Cook over low heat/flame about 1 min, making sure that garlic doesn't burn.
  • Step #8 Add mashed cauliflower, salt & pepper (to taste), to the garlic in the skillet.
  • Step #9 Raise heat to high, & stir mixture until the moisture evaporates.
  • Step #10 Remove from heat & cool for 15 mins.
  • Step #11 Stir eggs & flour into cooled cauliflower mixture, & spread evenly into pie plate.
  • Step #12 Sprinkle top top this with remaining oil.
  • Step #13 Bake 30 mins, until the top just starts to brown.
