Beet And Apple Salad Recipe

Ingredients

2 c apples, sliced .
1/4 c water .
1/4 c sugar .
Dressing .
1/4 c white vinegar .
1/2 tbsp flour .
2 c beets, cooked & sliced .
Salad .
1/4 c walnuts, sliced (optional) .
1 extra large egg .
1 tsp dry mustard .
2 hard-boiled eggs, sliced .
salt & pepper

Directions

Step #1 For dressing, mix egg with sugar & beat well.
Step #2 Stir in flour & mustard.
Step #3 Add mixture to heated water & vinegar in a small heavy saucepan.
Step #4 Cook, stirring constantly, over low heat/flame until thick, 2-3 mins.
Step #5 Spice up to taste with salt & pepper.
Step #6 Cool.
Step #7 In a medium bowl, mix the 4 salad ingredients.
Step #8 Pour the cooled dressing over & mix well.
Step #9 Garnish with parsley & sliced nuts, as desired.
Step #10 Serve chilled.
