Maple And Corn Coffee Cake Recipe

Ingredients
  • 1 c sugar .
  • 2/3 c buttermilk .
  • 2 tsps baking soda .
  • 3 eggs .
  • 1/2 c yellow cornmeal (I used stone-ground) .
  • 1/2 c butter, softened .
  • 3/4 c maple syrup, I used 1/2 c (use real maple syrup if you can) .
  • 1 1/2 c flour .
  • 1/2 tsp salt .
  • 1 tsp vanilla .
  • 1 c walnuts, finely sliced

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 With an electric mixer, cream the butter & sugar together until pale & fluffy.
  • Step #3 Add the eggs, one at a time, beating well after each addition.
  • Step #4 Stir in the vanilla.
  • Step #5 Combine the cornmeal, flour, baking soda & salt & mix well.
  • Step #6 Add the flour mixture to the butter mixture in thirds, alternating with the buttermilk & mixing well after each addition.
  • Step #7 Stir in sliced nuts & mix well.
  • Step #8 Spread the batter evenly in a buttered 13-by-9-by-2-inch baking pan.
  • Step #9 Bake for 30 mins or until firm & lightly browned.
  • Step #10 Remove from oven & pour the maple syrup evenly over the top of the cake.
  • Step #11 Return pan to the oven for 5 mins.
  • Step #12 Remove from oven & let cool completely before serving.
  • Step #13 Makes 10-12 servings.
