Chicken With Quinoa Recipe

Ingredients
  • 1 c chicken broth .
  • 2 lbs boneless skinless chicken thighs, fat trimmed .
  • 2 carrots, peeled & finely sliced .
  • 2 tsps minced garlic .
  • 1/2 medium onion, finely sliced .
  • 1/4 tsp black pepper .
  • 2 tbsps white wine .
  • 2 tbsps butter .
  • 1/3 c quinoa, rinsed .
  • 1 tbsp quinoa, rinsed .
  • 1 tbsp sliced fresh parsley (optional) .
  • 2 celery ribs, finely sliced .
  • 3/4 tsp kosher salt

Directions
  • Step #1 Add all ingredients except for chicken & parsley to the slow cooker (aka crockpot) crock & mix well to mix.
  • Step #2 Place chicken thighs on top of the mixture.
  • Step #3 Cover up & cook on LOW for 8 hrs.
  • Step #4 To serve, transfer chicken thighs to individual bowls using tongs.
  • Step #5 Mix the quinoa & vegetables well, then spoon into the bowls alongside the chicken.
  • Step #6 Sprinkle top with fresh parsely, if desired.
