Grilled Salmon & Orzo Salad Recipe

Ingredients
  • 1 cucumber, peeled, halved, seeded, & cut into 1/2-inch dice .
  • 1 1/2 lbs salmon fillets, about 1 inch thick, cut into 4 pieces .
  • 1 tbsp sliced fresh dill .
  • 1 tsp lemon juice .
  • 4 plum tomatoes, cut into 1/2-inch dice .
  • 1 tbsp olive oil .
  • 2 tbsps lemon juice .
  • 1/2 grated lemon, zest of .
  • 1/3 c sliced fresh dill, plus .
  • 1 tsp salt .
  • fresh ground black pepper .
  • 1/2 lb orzo pasta (about 1 c) .
  • 1/3 c olive oil, plus

Directions
  • Step #1 Place large pot of water on a burner & bring to a boil for the orzo.
  • Step #2 In a strainer placed over a bowl, tomatoes, toss cucumber, & 1/2 tsp of the salt & let drain for 20 mins.
  • Step #3 Preheat grill.
  • Step #4 Cook orzo until JUST done, about 12 mins.
  • Step #5 Drain.
  • Step #6 Rinse with cold water & drain well.
  • Step #7 Toss orzo with the 1/3 c oil, lemon juice, 1/4 tsp of salt, 1/3 c dill, & 1/8 tsp pepper.
  • Step #8 Coat salmon with 1 tbsp oil, remaining 1/4 tsp salt, & 1/4 tsp pepper.
  • Step #9 Grill salmon, skin-side up, for 4 mins.
  • Step #10 Turn & sprinkle with the 1 tbsp dill & lemon zest.
  • Step #11 Cook salmon until golden & just barely done (the fish should still be translucent in the center), about 3 mins longer.
  • Step #12 Serve salmon on top of the salad.
