Seviche-style Shrimp And Avocado Tacos Recipe

Ingredients
  • 3/4 tsp salt .
  • 1 c sliced peeled avocados (about 1 avocado) .
  • 1 c sliced seeded tomatoes .
  • 1 lb cooked peeled medium shrimp .
  • 3 limes .
  • 1/4 tsp black pepper .
  • 1/2 c sliced fresh cilantro .
  • 3 garlic cloves, minced .
  • 12 (6 inch) corn tortillas

Directions
  • Step #1 Finely grate rind from limes to measure 1 tbsp, juice limes to measure 1/4 c.
  • Step #2 Place rind & juice In a large-ish bowl.
  • Step #3 Add tomato & remaining ingredients except tortillas; toss well to mix.
  • Step #4 Cover up & chill for 15 mins, stirring every once in awhile.
  • Step #5 Heat tortillas according to package directions.
  • Step #6 Spoon about 1/2 c shrimp mixture down center of each tortilla, fold in half.
  • Step #7 Serve as soon as possible.
