Pecan-studded Chicken With Maple Orange Glaze Recipe

Ingredients
  • 4 tbsps honey .
  • 4 tbsps orange juice concentrate .
  • 1 lb skinless chicken breast halves, boned & defatted .
  • 1 tbsp olive oil .
  • 2 tbsps pure maple syrup .
  • 2 tsps shallots, minced .
  • 1/4 c pecans, minced .
  • 1/4 c breadcrumbs

Directions
  • Step #1 With a meat mallet, lb chicken between two pieces of waxed paper until 1/2 inch thick.
  • Step #2 Preheat oven to 400.
  • Step #3 Lightly coat a baking pan with olive oil.
  • Step #4 In a small bowl, mix minced pecans & bread crumbs.
  • Step #5 Brush chicken with honey & coat with bread crumbs.
  • Step #6 Place chicken on baking sheet.
  • Step #7 Bake for 15-20 mins or until golden brown.
  • Step #8 In a small saute pan, saute shallots in olive oil over med-heat/flame for 1 min.
  • Step #9 Add maple syrup & oranje juice concentrate & bring to simmer.
  • Step #10 Serve each chicken breast with 1/2 Tablespoons of maple orange glaze.
