Vegetarian Lo Mein Recipe

Ingredients
  • 1/4 c chicken broth .
  • 1 tbsp low sodium soy sauce .
  • 1 c snow peas .
  • 1 c bean sprouts .
  • 1 tbsp oyster sauce .
  • 1/4 tsp dark sesame oil .
  • 1/2 c carrots, shredded .
  • 6 oz Chinese egg noodles, uncooked .
  • 4 fresh mushrooms, thinly sliced .
  • 7 oz firm tofu, cut in 1/2 inch cubes .
  • 1 tbsp canola oil .
  • 1 c bok choy, thinly sliced .
  • 1 small onion, thinly sliced

Directions
  • Step #1 In a wok or large skillet, stir fry the tofu cubes, set aside.
  • Step #2 Cook the Chinese egg noodles according to package directions, but add the snow peas about one min before the cooking time is done.
  • Step #3 Drain the noodles & snow peas, toss with the sesame oil & keep warm.
  • Step #4 Heat the wok, bok choy, add oil & add onion, carrot & mushroom; & stir fry for a few mins until hot.
  • Step #5 Add chicken broth, oyster-flavored sauce & soy sauce.
  • Step #6 Add noodles & snow peas, & stir-fry until heated through.
  • Step #7 Add bean sprouts, & and tofu cubes & stir-fry until heated.
  • Step #8 Makes 2 large servings.
